Culinary Arts
YEAR 1
Culinary Arts 1 (8800510)
This course covers the history of the food service industry and careers in that industry. Also covered are safety in the workplace; employability skills; leadership/teamwork skills; care and use of commercial culinary equipment; basic food science; basic nutrition; and following recipes in food preparation labs.
YEAR 2
Culinary Arts 2 (8800520)
In this course students will learn state mandated guidelines for food service; how to attain food handler training certification; and perform front-of-the-house and back-of-the-house duties. Students will prepare quality food products and present them creatively; demonstrate safe, sanitary work procedures; understand food science principles related to cooking/baking; and utilize nutrition concepts when planning meals/menus.
YEAR 3
Culinary Arts 3 (8800530) - Honors Level
In this course the student will research career opportunities in professional cooking/baking; follow guidelines on food selection, purchasing, and storage; and use communication skills. Students will prepare and present a variety of advanced food products; create centerpieces; and research laws specific to the hospitality industry. Also covered are management skills; how to develop a business plan; and utilization of technology in the workplace. Students will be knowledgeable about food safety manager training/certification training programs that are acceptable in Florida.
YEAR 4
Culinary Arts 4 (8800540) - Honors Level
This course provides opportunities for students to apply their acquired knowledge and skills in culinary related scenarios. This course focuses on Culinary and Hospitality Management. This is a culminating course to develop advanced culinary techniques and skills. Students will learn using modern technology and culinary trends.
Finance & Entrepreneurship
YEAR 1
Digital Information Technology (8207310)
This core course is designed to provide a basic overview of current business and information systems and trends, and to introduce students to fundamental skills required for today’s business and academic environments. Emphasis is placed on developing fundamental computer skills. The intention of this course is to prepare students to be successful both personally and professionally in an information-based society. Digital Information Technology includes the exploration and use of databases, the internet, social media, spreadsheets, presentation applications, management of personal information and email, word processing and document manipulation, HTML, web page design, and the integration of these programs using software that meets industry standards.
YEAR 2
Accounting Applications 1 (8203310) - Honors Level
This course emphasizes double-entry accounting; methods and principles of recording business transactions; the preparation of various documents used in recording income, expenses, acquisition of assets, incurrence of liabilities, and changes in equity; and the preparation of financial statements.
YEAR 3
Business Ownership (8812000) - Honors Level
Entrepreneurship is taught in an incubator classroom using the INCubatoredu curriculum through Unchartered Learning. Throughout the course, students participate in an authentic entrepreneurship experience. They develop their own product or service startup which solves a problem they care about. Student teams explore, pivot, iterate and develop resilience as they work through the lean start-up process and even pitch to gain funds to test the validity of their idea. Real entrepreneurs and industry experts serve as guest speakers and mentors, guiding students through the process.
YEAR 4
Personal Finance (8815120) - Honors Level* or Dual Enrollment at FGCU
This course develops an awareness of the need for care and organization in planning for the wise use of economic resources and financial products available through a study of savings, credit, insurance, banking, investing and financial goals. The students are also made aware of the career opportunities offered in financial services. (*Golden Gate High only offers Honors Level)
Marketing Management
YEAR 1
Marketing Essentials (8827110)
Marketing Essentials blends theory and practice to facilitate immediate implementation and impact. Students will learn to develop strategic marketing with sales and customer plans. A review of the marketing environment is used to help develop the segmentation, targeting and market positioning strategy for implementation along with the marketing mix (product, price, place and promotion). The goal is the identification and delivery of organizational competitive advantage and customer satisfaction key to long-term revenue growth, profitability and success.
YEAR 2
Marketing Applications (8827120)
This course is designed to provide students with an in-depth study of marketing in a free enterprise society and includes advertising, promotion, product development and branding, selling and marketing research. This course also includes the uses of technology and the electronic media in marketing, purchasing, retail positioning strategies and e-Commerce marketing.
YEAR 3
Marketing Management (8827130)
This course provides instruction for career-sustaining level of employment in the industry. The content includes applied skills related to marketing functions, employment skills required for success in marketing and career planning as related to a marketing industry.

INCubatoredu@CCPS
The INCubatoredu program offers students an authentic entrepreneurship experience. In this program, students have the opportunity to create and develop their own entrepreneurial idea. Real entrepreneurs and business experts serve as volunteer coaches and mentors, guiding student teams through the Lean Startup processes of developing hypotheses about a business concept, testing those hypotheses, adapting, and continually learning and improving. This cycle of experimentation is combined with foundational business concepts such as marketing and finance.
Ways to Get Involved
There are varying levels of time commitments and involvement, including coaches, who work with the teacher to co-teach a lesson over the course of a few class periods, to mentors, who work with students weekly via in person meetings, email, phone, etc. to help mold and shape their idea, to school champions, who go out into the community to help spread the word and find coaches and mentors to work with students and teachers.
COACH - Coaches are subject matter experts who co-teach with the classroom teacher to help deliver a lesson. Lessons are 1 to 3 days of 2 consecutive class periods which are approximately 50 minutes each.
MENTOR - Mentors provide feedback and work one-on-one with a single team of students to help develop their ideas. Typically, mentors meet with their group once a week throughout the school year.
COMMUNITY CHAMPION - Champions bridge the gap between the community and a school to assist in identifying coaches and mentors
